Good morning Mr. X. Your mission, should you choose to accept it, is to print out all the recipes from Deux-Sèvres found on this website and test them in your own home. Be warned however, all of these food products are perishable.

The best way to experiment with the gourmet heritage of the Deux-Sèvres is to taste its most famous recipes, preferably savouring them on the premises : the sweet fragrance of the hollyhocks, the soft murmur of the marsh, the song of the vines and the birds are necessary ingredients that are never mentioned in the recipes !

Entrées :

• Farci Poitevin, the local grub
• Chestnut and Pumpkin Soup, an unctuous soup fresh out of the woods.
• Patatou, a purée and a pie, for sheer delight !
• Eel clafoutis with nettle or Glasswort, an exclusive recipe from chef Jean-Baptiste Braud, winner of the Petits Chefs 2005 prize.

• Eel Fricassée, the king of the marsh, prepared with garlic.
• Mojettes à la maraichîne, simmered beans to accompany ham.
• Poulet à la poitevine, chicken with mushrooms, onions, potatoes and bacon.
• Sorrel Pudding, the creamiest pudding ever.
• Chevreau à l’ail vert, seasoning that’s just right.
• Sauce aux Lumas, snails and red wine.
• Porc au Pineau, an original recipe suggested by Megan Wright, winner of the Petits Chefs 2005 prize.
