This refined dish is to be served very hot.
Ingredients for 4 people :
Half a kid goat
4 bunches of green garlic
4 teaspoons sour cream
1 litre dry white wine
Salt, pepper, mustard.
Preheat the oven, thermostat 5/6.
Clean the green garlic and chop it finely.
Cut the kid in equal slices and lay them in a big pan.
Season with the salt and pepper, and baste the meat with the mustard. Add a glass of white wine.
Put in the oven, thermostat 5/6, for half an hour.
Add the rest of white wine and thin with the sour cream. Bake another 15 minutes.
Serve with sauteed potatoes.
